Description
The USDA, Agricultural Research Service, Hard Red Spring & Durum Wheat Quality Lab, Fargo, North Dakota, intends to enter into a single source contract with C. W. Brabender Instruments, South Hackensack, New Jersey, for the purchase of an Extensograph E for measuring and recording the stretching properties of wheat flour doughs before and after rest and the effects of additives on stretching properties and the effects of different oxidation and reduction chemicals and other ingredients that are used in the production of commercially baked products, including a dough homogenizer, dough moulder, and temperature controlled relaxation cabinet, stretching device and electronic measuring system. This equipment is used in several Federal and State research laboratories and commercial baking laboratories that test flour quality traits. It is critical that results generated are well correlated with results from other dough rheology instruments such as a Government-owned Farinograph E and Mixograph. The dough stretching and strength results will be compared among commercial wheat cultivars and advanced breeding lines that have potential for commercial production. The physical dough test protocol for the extensograph method is AACC Method 54-10, which will be applicable in the Wheat Quality Laboratory to test extensibility traits of wheat flour dough. Dough extensibility data from the extensograph is important in many wheat importing countries and the information will be used by wheat breeders in the development and release of new varieties that meet export demands. Because of the built-in homogenizer, rounder, and humidified chamber of the Extensograph E, there is the ability to achieve consistent results in testing comparing dough extensibility traits among wheat genotypes that are submitted by wheat breeders and guarantees consistent conditions prior to the actual stretching (evaluation) of the dough sample. *Provide Qualification Statement by Close of Business May 2, 2005, if interested in this procurement.
